Tomato Coconut Soup - Almost Perfect

I've been trying to perfect this one for years. It may not be perfect, but it's close. It's served at one of my favorite restaurants, Fish 101 in Leucadia, CA. Alongside a Poke Bowl it rounds out maybe my all-time favorite meal, especially after surfing.
Ingredients
- 2 Tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, peeled
- 2 (14.5 oz) cans diced or whole tomatoes
- 1 (14.5 oz. can organic coconut milk (full fat)
- ½ tsp salt
- 1 tsp cumin
- ½ tsp paprika
- Fresh ground black pepper, to taste
Instructions
Pour olive oil into large saucepan and heat on medium-high heat. Add onions and garlic; saute for 5-7 minutes until soft. Add tomatoes (undrained), coconut milk, salt, cumin, and paprika. Increase heat to high, bring to boil, then allow to simmer for 5 minutes. Blend with hand-blender in pot or in batches in blender (careful to hold lid on). Return to pot. Add salt & pepper to taste.
